I had so much fun taking picture and showing you what I eat in a regular day that I decided to do the same thing on a lazy day, during the weekend when I do not go to the gym. I took pictures for the whole weekend so I will split everything between Saturday and Sunday.
As usual, my breakfast remains the same. I used to drink smoothies and I sometimes (should I say « rarely »?) cook oatmeal, but as I said in my other post (check it out here if you haven’t read it), I love peanut butter and banana on toasted bread. So it is what I decided to have, again. On Saturday, I drank a matcha tea with water to give me an extra energy boost (before cleaning my place!). On sunday I had to eat a kiwi I bought at the organic store so I made some toasted bread with cashew butter and kiwi. It was delicious and it is nice to have something somewhat different from everyday!
Lunch was pretty fancy as I decided to make some polenta steak with a regular salad. Polenta is corn powder. I usually don’t like corn but I like polenta. It is cooked like a purée, by putting water on boil, adding the polenta and mixing for 5 minutes to cook. I mixed spices, black olives, spring onion and dried tomatoes and cooked the stuffed steaks in the oven. For dessert, I had a lemon tart, full of bad things, but who cares, it is the weekend!
On sunday, it was my dad’s birthday. I decided to have a fancy lunch with salmon (I love salmon), topped with an usual – yet delicious – sauce made with soy sauce and orange juice. I ate salmon with whole rice. We celebrated my dad’s birthday at noon so I ate a marble cake I just made. It was really funny to make as I layered « whiter » and « browner » paste. It was delicious! We cannot really see the differences between the layers because I used coconut sugar, which is delicious, healthier than
poison regular sugar, and make desserts pretty sweet.
I am a big snack eater and I religiously take my snacks by 4pm but I ate so much at lunch that I didn’t feel like eating any snack apart from tea (sorry guys!). During the weekend, if I am hungry, I usually make myself a smoothie or I cook apple with applesauce in the microwave for 5 minutes. I am intolerant to raw apples but I found out I digest cooked apples pretty well.
On Saturday I made one of my favourite dish: spinach millefeuille. In the picture it doesn’t look tasty, but trust me it is! I make a mix between feta cheese and fresh spinach. In a plate, I put a samosa layer, the half of my mix, another samosa layer (to make the millefeuille), another spinach mix and I finish by one last samosa layer. I put that in the oven for a bit and voila! It is naturally salted and so good !
For Sunday, I didnt do too much. I took some remaining samosa layer and made small tart with it. I pour a bit of light béchamel at the bottom, topped with zucchini, cherry tomatoes and (again) feta cheese. It was tricky to eat in the tart plate but they béchamel mixed with the other ingredients made everything delicious.
That’s all for the weekend guys! On saturday, I ate 671 calories : 31.75grams of fat, 74.23 grams of carbs and 18.93 grams of proteins. On sunday, I ate 986 calories : 34.84 grams of fat, 113.03 grams of carbs and 50.3 grams of proteins. I decided to cut sugar from my diet so I do not eat any dessert anymore.
Do let me know what you like to eat on lazy days !
